Tiramisu!

This was my first time making Tiramisu and it was so good! I planned on taking a picture of a piece cut out but it was gone within a few minutes!
I used a pyrex dish, I think size 7x11. A trifle bowl would look even fancier!


6 egg yolks

3/4 cup white sugar

2/3 cup milk

1 1/4 cup heavy whipping cream

2 table spoons white sugar

1/2 teaspoon vanilla

1 pound mascarpone

1/2 cup espresso or strong brewed coffee

1/4 cup rum ( I used the clear Bacardi)

1 package of lady fingers (I bought mine at Sprouts)

1/2 tablespoon unsweetened cocoa powder or if your really fancy you can do chocolate peels



In a medium saucepan, whisk together egg yolks and 3/4 cup sugar until well blended. Whisk in milk and cook over medium heat, stirring constantly, until mixture boils. Boil gently for 1 minute, remove from heat and allow to cool slightly. Cover tightly and chill in refrigerator 1 hour.

In a medium bowl, beat cream, 2 tablespoons of sugar and vanilla until stiff peaks form.
Whisk mascarpone into yolk mixture until smooth. Then fold whipped cream into mascarpone mixture.

In a small bowl, combine coffee and rum. Split ladyfingers in half lengthwise and dip lady fingers into espresso mixture just to get wet.

Arrange half of soaked ladyfingers in bottom of a dish. Spread half of the cream mixture over lady fingers evenly Repeat layer and sprinkle with cocoa.

Cover and refrigerate 4 to 6 hours, until set.

Easy green chili pork

I know I have a green chili recipe on here already but this one is just as good and much easier to make!
You will need a pressure cooker, I have a Fagor Duo 8 qt, it is one of the best!

2 tablespoons of oil
2 lbs of pork cut in 1 1/2 inch chunks (any kind of pork) 
1 jar of Herdez green salsa
1 cup of fire roasted green chili
1/2 table spoon of garlic powder
1/2 table spoon of onion powder
salt and pepper to taste
Put oil in the pressure cooker on medium high heat once oil is hot brown your pork,  just brown it don't worry about cooking it all the way. After all the meat is browned add the rest of your ingredients mix well and bring to a low boil. Put lid on pressure cooker and follow your cookers directions. My pressure cooker takes about 30 min to get pork where it is falling apart.
That's it!!!! I like using it in breakfast burros or for dinner:)

Mac n Cheese

I love macaroni and cheese!! My Dad used to make it when I was a kid and it was my favorite thing he cooked!

Elbow noodles 1/2 box (I use Barilla)
4 tablespoons of butter
1/4 finely diced yellow onion
about a 1/4 cup of all purpose flour
3 1/2 cup whole milk
1 1/2 bags shredded Colby jack or Mexican cheese
4 slices American cheese
1/3 bag of Cheez its crushed

Bring a large pot of water to a boil add noodles and boil about 6 minutes, you want them al dente. While noodles are boiling melt butter in a medium sauce pan and add onions. cook on med until onions are translucent. Add flour to your onions and cook for about 2 min stirring constantly should be similar to a paste but not as thick. If it's to thin add more flour, to thick add a little more butter. After the 2 mins whisk the milk into the onion mixture. stirring often add all the cheese and mix till smooth and completely melted. Drain the noodles and add  to a buttered 13x9 pan stir in cheese sauce and top with crushed Cheez Its. Bake on 375 for about 20-30 mins. Cliff likes his cheese a little browned and crispy so just keep checking till it looks nice and golden.
